Banh Mi Tacos

This is a quick and easy recipe that is perfect for a weeknight meal. It’s incredibly flavorful and very filling.

While Banh Mi traditionally refers to baguettes and the Vietnamese sandwiches made on them, this recipe takes some traditional vegetarian banh mi ingredients, mixes them with others, and puts them in a taco.

Blackened Tempeh Tacos

Have you ever had fresh homemade tempeh? If not, you are missing out on a real treat. My partner is not a fan of store-bought tempeh, but loves the tempeh we make at home. It just tastes fresher, nuttier & yummier, with none of the bitterness store-bought tempeh sometimes has.

I can’t get enough of it, which is fine because it’s incredibly healthy.

BBQ Chicken-Free Sweet Potato Tacos

This is a bit of a non-recipe, but these bbq chicken-free sweet potato tacos were so good I just had to share it.  This recipe came together at the end of a very long day, when I needed a satisfying meal on the table as quickly as possible.  They took maybe 15 minutes to pull together from start to finish and the combination of flavors was to die for!

Portobello Mushroom and Garlicky Greens Soft Tacos

A couple of months ago while in San Francisco I visited Gracias Madre, a vegan Mexican restaurant for lunch.  Everything on the menu looked amazing and choosing just one thing seemed impossibly hard.  In the end, I decided to go with the tacos, because then at least I could try three different fillings. I ordered a mushroom taco, a taco with eggplant and a third with sautéed greens.
