Shitake BLT

I’ve been stuck indoors and working through weekends for much of the past few weeks. So when I had a Saturday morning off in the city on a gorgeous Spring day before a set of afternoon meetings, I decided to take full advantage of it. I headed straight to Tribeca to try the food at the new Sun in Bloom location and I’m happy to report that it was a trip that was definitely worth taking. With its primarily vegan and gluten-free menu, I felt like a kid in a candy store. So much choice, and oh so much deliciousness!

Sweet and Simple Springtime Quinoa Salad

Last night I put some quinoa on to cook in my rice cooker, with the intention of making a quinoa bowl for dinner.  But my partner came in and was quite clear that he wanted something else.  It’s not very often that my partner has opinions about what we should eat for dinner, but it was the first time in more than a week that I was cooking and in my absence he had been eating a lot of rice bowls and didn’t want another incarnation of that.  So we had burgers instead and I saved the quinoa for this delicious quinoa salad.

But now, at 9:30pm on a Friday night as I sit on the floor of a hallway in the basement of the UN, this blog is a welcome distraction and mental break.

Chana Masala with Kale

While chocolate may be first on my list of things I cannot live without, the humble and delicious chickpea might be second.  And one of my favorite dishes of all time is chana masala. This is my very own take on the classic Indian dish and it’s a hearty and soul-satisfying one.

Chocolate Peanut Butter and Jelly Smoothie

Chocolate Peanut Butter and Jelly Smoothie

I’m updating the old adage that an apple a day keeps the doctor away to a green smoothie a day… First, because I’m allergic to and can’t eat apples. And second, because I think it’s actually true!  I can’t remember the last time I got a cold, or got sick enough to actually visit a doctor. And the one or two times I’ve not been well in the past couple of years, it really has been due to sheer physical exhaustion from travel or work.
