I don’t know about you but I always buy bananas with the intention of eating them quickly. Somehow I never manage to finish a bunch before they start to get overly ripe. When that happens I do one of two things: freeze them so that I can use them in smoothies or bake muffins or bread. So in honor of over-ripe bananas, here’s a recipe for a flavor-packed banana bread with raisins and pecans.

Pumpkin & Spice Bread! And of course it’s gluten free!

I don’t know about you, but I’m still recovering from VeganMoFo. I’m still catching up on all the amazing blogs that were written during the month. And I’m really enjoying having weekends that are a little more relaxed! Now, I can spend all day if I want to creating a recipe and getting it just right, rather than worrying what I’ll do if I didn’t get at least five recipes perfect in two days!  

This afternoon after I got back from a really great yoga class, I decided I was going to try to get my crumpet recipe right.

Gluten-Free Teff Flat Bread

I took a really great in-depth herb and spice workshop at the Natural Gourmet Institute last week. It was vegan, but not gluten-free, and so I brought crackers along to make sure I could enjoy the dips we made along with everyone else.  The rest of the class had some lovely little whole wheat flat breads, which looked delicious (and were for sure better than my crackers).  I knew that I had to come home and try my hand at making some gluten-free ones of my own.

Teff Focaccia

I’ve been experimenting a lot with vegan and gluten-free bread-making recently. Some recipes work beautifully, others need quite a bit of work before I can say I feel like they are shareable.  That sometimes means we’re eating dense, hard bread for a week!  But this lovely recipe for teff focaccia… this was just gorgeous. And so quick and easy! I based the recipe on one in Jennifer Katzinger’s Gluten-Free and Vegan Bread book, however made a few changes to make the recipe work for me.

Millet and Flax Sandwich Bread

I had wanted a nice light, but tasty gluten-free and vegan sandwich bread for a while.  I had tried making others in the past and while they were good, they were a little bit dense for my liking.  

For this bread I combined my wild yeast starter with dry yeast to get the best rise I’ve had yet out of a gluten-free bread. It has a delicious crusty crust, but is nice and soft inside, with a gorgeous crumb.
