Rhubarb, Strawberry and Walnut Muffins!

I am lucky to live near a great farm that sells fresh produce on Saturdays. They always have an abundance of leafy greens, as well as lots of gorgeous seasonal delights, like ramps, spring garlic, and garlic scapes. And when I visited my local farm last weekend, there was a beautiful bunch of rhubarb just begging to come home with me.

These banana, walnut and chocolate chip muffins are oh so delightful and oh so delicious.  They are the the perfect treat for breakfast or an afternoon snack. Or any time you need a little pick-me-up. In fact, I could eat them all day.

Once in a while I come up with a recipe that is really, really mind blowing. On the rare occasion it does happen, it is usually of the baked goods variety. In this case it is is these spectacular peanut butter and chocolate chip mini muffins.  If there is one recipe of mine you should try, it is this. 

You know how sometimes you try gluten-free baked goods and they are dry, heavy and dense and the only way they are kinda edible is if you toast them?

Cranberry White Chocolate Hazelnut Muffins

Although I haven’t always been much of a cook, one thing I have always enjoyed is baking.  I love nothing more than mixing up a batch of muffins, filling the house with the gorgeous smells of freshly baked goods, and then having delicious treats to snack on for days afterwards.

These muffins are particularly special. The flavors and textures are just amazing. They are moist, but with a nice crisp crust.
