What’s for dinner? Pad Thai!

Putting into practice the skills that I learned at May Kaidee’s cooking class in Bangkok!  

Just about every vegan pantry should have the ingredients necessary to cook this from scratch: carrots, onion, tomato, tofu, garlic, lime juice, tamari, chili peppers, sugar, rice noodles, coconut milk, peanuts and whatever veggies you like. No oil-, sugar-, or preservative-laden store-bought sauces necessary!

Banana Ginger Green Smoothie

It must be obvious by now that I love green smoothies.  When I’m home I will have one, two or sometimes even three a day.  I like to experiment, but I have a few favorites that all seem to have either raw cacao or powdered peanut butter, or both! 

When I was in Bangkok I had a very delicious banana and ginger smoothie, which I had to try to recreate.  The ginger adds a nice spicy kick and helps to aid digestion, plus it tastes awesome.

Almond Milk Recipe

There’s nothing simpler to make than almond milk and even though almond milk recipes abound, I thought I would share mine.  Before I started making my own I used to buy unsweetened vanilla almond milk by either Silk or Blue Diamond.  I loved the subtle vanilla flavor and I loved the fact that it was only 30 calories/cup.  Given that, I was surprised when I realized that most homemade almond milk recipes contain at least three times the calories.

Roasted Red Pepper and Artichoke Hummus

Every week I make a big batch of hummus.  I love that in less than 5 minutes, I can whip together a tasty and healthy snack. I dip carrots and sugar snap peas in it to snack on between meals, while my partner loves it with Crunchmaster multigrain gluten-free crackers.

This hummus not only tastes delicious and it has no added oil!

Sweet Basil and Pineapple Green Smoothie

I drank many delicious fruit smoothies in Bangkok and this is inspired by one of them. The basil adds a bit of delicious complexity to the pineapple. It may sound strange, but trust me: basil in a smoothie can be a very, very good thing.  Of course, I had to make it green!
