Delicious quinoa salad

I have been meaning to write this review for quite some time, because believe me, Bombay Sandwich Co.’s food is worth writing home about! I’ve tried just about everything vegan and gluten free on the menu now and when I’m craving good, wholesome, comfort food, it is at the top of my list.  

For us vegans who can’t eat gluten, it’s heavenly.

Butternut Risotto and Risotto Balls!

As the name of this blog implies, I like my cooking to be sweet and simple. But sometimes, just sometimes, a recipe is worth slaving over the stove for.  This butternut risotto is definitely one of them! 

It’s as all risotto should be: creamy, delicious and just a little bit decadent. This risotto also has some nice bright flavors from the lemon juice, tarragon and dill that will make your taste buds dance!

Cranberry White Chocolate Hazelnut Muffins

Although I haven’t always been much of a cook, one thing I have always enjoyed is baking.  I love nothing more than mixing up a batch of muffins, filling the house with the gorgeous smells of freshly baked goods, and then having delicious treats to snack on for days afterwards.

These muffins are particularly special. The flavors and textures are just amazing. They are moist, but with a nice crisp crust.

So for the past week my life has been overtaken by work: early morning meetings, late night writing, falling into bed exhausted at the end each day…  All that to say, keeping on top of the basics has been tough, let alone this blog. 

But today I’m sharing with you an extra special and delicious green smoothie that was inspired by a spectacular creamy dessert in Fran Costigan‘s Vegan Chocolate book (seriously people, this cook book is simply amazing).

Smoked Tofu Salad

This is a very busy time for me at work, so when I get home at night I’m not interested in slaving over the stove. All I really want to do is get a really delicious and nutritious dinner on the table as quickly as possible. This salad fits the bill perfectly.  If you use a store-bought smoked tofu you can get it on the table in 10 minutes. This really is great vegan fast food.  

This salad was inspired by one I ate at Eatonville restaurant in DC.  It’s not quite as amazing (I can’t compete with real applewood smoked tofu!), but it’s still pretty good!
