I made cashew cream for the first time a few weeks ago, and honestly, I don’t know why I waited so long to try making it myself. I couldn’t believe how good it was!
I used it to top soft tacos with dehydrated portobello mushrooms, garlicky kale, and avocado (inspired by a recent meal at Gracias Madre in San Francisco). When I make them next (and take a picture), I promise I will share the recipe; they were soooo good! But in the meantime, here are some soyrizo tacos with basic cashew cream:
Here’s the basic cashew cream recipe:
- 1 cup cashews, soaked at least 1 hour
- 1/2 cup of water
- 3 tbsp lemon juice (or more to taste)
- Salt, to taste.
- Place all ingredients in a blender and blend on high until smooth.
- It makes approximately 1 cup, serving size is about 1 tbsp.


- 1/3 cup basic cashew cream
- 2 tsps sweet relish
- 1 tbsp red onion, finely diced
- 2 tsps pickle, finely chopped
- 2 tsps fresh dill, or ½ tsp dried
- Freshly ground black pepper
- Put all ingredients in a small container and stir to combine.
- Store in the refrigerator.
- Serving size is 1 tbsp.
Then, a few days ago I needed a sweet cream for this decadent and delicious crepe cake:
The recipe called for coconut whipped cream, but I didn’t refrigerate a can of coconut milk in advance and I didn’t really want to wait. So I converted the basic cashew cream recipe into a sweet cream to layer in between and on top of the crepes! It was so very yummy. It is a slightly tangy but sinfully sweet cream perfect for crepes or anything else!
- ½ cup basic cashew cream
- 2 tbsps maple syrup
- 1 tsp vanilla essence
- Put all ingredients in a blender and blend until smooth.
- Serving size is 1 tbsp.
It tasted just like store-bought vegan sour creams and is definitely something I will be using again and again.
- 1 cup cashews, soaked for at least one hour

- 2 tbsps lemon juice
- 1 tsp apple cider vinegar
- 1 tsp white vinegar
- Salt and freshly ground black pepper, to taste.
- Place all ingredients in blender and blend on high until smooth.
