A Very Untraditional Borscht…

Borscht!

One of my worst character traits is that I’m impulsive. That often means when I go to the farmers market I get carried away. I buy far too many things because they look pretty, or because I think “I can make a great x with that” without actually thinking about how much produce I’m buying and realistically what I’ll be able to do with it within a week. This soup is the result of one such farmers market buying spree. I had a ridiculous number of beets of all kinds that were in desperate need of being used. Roasted Butternut Squash Soup with Walnut Thyme Pesto

There is something deeply comforting about soup, especially when its freezing outside.  And this particular soup is like a nice bowl of liquid warmth. It has bright, beautiful, complex flavors. And while it’s already super smooth and creamy, the dollop of cashew cream just makes it a velvety delight.

The flavors in this soup are just amazing. Roasted tomatoes add some richness and depth.

Spicy Lentil Soup

I have been on a bit of a soup kick lately.  It’s the ultimate comfort food. So warm and sustaining, especially when it’s freezing outside. And when it’s paired with a fresh loaf of crusty gluten-free bread, so yum!

I love lentil soup, but so much of what is available is bland and boring.  This soup is anything but.

Bright and Beautiful Cannellini Bean and Kale Soup

I have a huge backlog of recipes to post but I wanted to share what I’m eating this week on the easy cleanse I’m doing to start 2014 off right. I’m on day three of my week-long Green Smoothie Challenge and today I decided to make a cannellini bean and kale soup for dinner.
