Thai Pesto Potato Salad Wide

Roasted potato salad with Thai basil pesto: wow that’s a mouthful. But a truly delicious one! At the moment I have a bountiful supply of Thai basil growing in my kitchen.  Not wanting to let any of it go to waste, I’ve been making batch after batch of thai basil pesto, putting it on just about everything (and freezing the rest for later). It’s amazing paired with avocado and tomatoes on toast. And it’s especially yum in this roasted potato salad recipe.

If there was one vegetable that I’d eat three times a day every day if I could, it would be potatoes. Because I’m so addicted, I try to limit myself to the occasional treat. And one of the things that I treat myself with is potato salad.  Growing up and still, there was no potato salad that compared to my grandma’s. But I’ve been trying to expand my horizons a little, and this potato salad comes very, very close!

Arugula & Baby Kale Salad with Spicy Lemon Vinaigrette

Today is a good day: I’ve just bottled my first batch of kombucha. It’s not quite done yet, it still needs to go through its second fermentation, but so far, so good! Feeding my kombucha habit has become quite expensive, so I hope this will save me money and allow me to make my kombucha exactly the way I like it.  Now I’m counting down the hours until I get to try my first bottle.
