Buffalo Soy Curl Tacos

Okay, so first let me say, I am not a sports person at all. I won’t be watching the Super Bowl on Sunday. In fact, I don’t think I’ve ever watched a game of American football.  I’ll actually be working that day, strategizing with fellow feminists about the week ahead (because activism never ends…). 

But, the vegan blogosphere has been alive with some delicious looking Super Bowl party recipes and as I was thinking about what to make for dinner last night I had an overwhelming craving for something with buffalo sauce.

Peanut Butter and Jelly Cookies!

So one evening my partner and I were watching a cooking show featuring American classics and the chef made very not vegan and not gluten-free peanut butter and jelly cookies.  OMG, they looked delicious. My partner turned around and asked me to make a vegan and gluten-free version and I quite happily took him up on the challenge.  He also jokingly added he wanted the jelly to be in a little heart shape.

Raspberry Mango Zinger Green Smoothie

I don’t know why but berries have been in abundance at my local supermarkets lately, and very inexpensive too. I’ve been eating them as though it were summer! I’m not going to complain, although I do feel a bit guilty about the distance they have had to travel to get to my kitchen table.

As I fall asleep at night, I often think about what kind of smoothie I’ll make in the morning (sad, I know!) When I dreamt up this smoothie, I almost was too excited actually fall asleep!

Millet and Flax Sandwich Bread

I had wanted a nice light, but tasty gluten-free and vegan sandwich bread for a while.  I had tried making others in the past and while they were good, they were a little bit dense for my liking.  

For this bread I combined my wild yeast starter with dry yeast to get the best rise I’ve had yet out of a gluten-free bread. It has a delicious crusty crust, but is nice and soft inside, with a gorgeous crumb.

Strawberry and Banana Baked Oatmeal

Wow, I have neglected this blog over the past few days. It’s been a crazy, hectic and exhausting week and just finding five minutes here and there to write, when I’m not already too tired to think, has been a challenge. I need to get much, much better at carving out me time and making sure that I’m paying just as much attention to my partner and myself as I am to my work. Of course, it’s easier said than done.
