I’ve had an amazing day in the kitchen, with lots of new recipes to share, including a beautiful gluten-free loaf of bread, some peanut butter and jelly cookies, and a beautiful roasted tomato soup.  But all of that cooking hasn’t left a lot of time for blogging, so tonight I’m sharing a very quick hummus recipe, this time using black-eyed peas.

Black Bean Hummus

Okay, I’m a sucker for hummus, as you can no doubt tell from this blog. That’s one of the reasons why I love Somer McCowan’s Green Smoothie Challenge. Because what’s not to love about eating up to a cup of hummus a day with plenty of fresh veggies? I’m on day five and I have been eating so many carrots and sugar snap peas dipped in hummus that it almost feels like I have been eating nonstop. It is seriously enjoyable.

Edamame Hummus

I’ve been quiet for the last week or so because I was home in Australia for Christmas with my family. I got to meet the four beautiful babies born since the last time I visited (yes, I’ve a very large family with 3 brothers, 2 sisters, and 12 nieces and nephews). I enjoyed runs in the sun by Lake Macquarie and countless summer barbecues with plenty of fresh salads. I ate gorgeous mangoes, berries and other summer fruit (my mum makes the best fruit salads ever!)

Pumpkin Hummus

A very quick post today from the airport as I head back to Bangkok.

There have been a million pumpkin hummus recipes floating around the internets in celebration of all things pumpkin and fall lately.  Here’s my version. This one is nice and light, with no added oil.  And it makes a ton (4 cups worth!).  If you’ve got some pumpkin purée left over or even if you don’t, it’s worth a try!

Smoky Chipotle Hummus

Smoky Chipotle Hummus

This hummus recipe has a delightful mix of flavors, smokiness from the adobo sauce, heat from the chipotle peppers and, of course, chickpeas.  I’ve used hemp seeds in this recipe to make it extra creamy and delicious. 

I don’t know about you, but I find that when I open a can of chipotle peppers in adobo sauce it takes me forever to get through it. If you have one open, this is a great way to use the peppers up!
