I don’t know about you but I always buy bananas with the intention of eating them quickly. Somehow I never manage to finish a bunch before they start to get overly ripe. When that happens I do one of two things: freeze them so that I can use them in smoothies or bake muffins or bread. So in honor of over-ripe bananas, here’s a recipe for a flavor-packed banana bread with raisins and pecans.

Oh I know it has been so so long since I posted here. Sometimes there are periods where I just don’t have the head space to do one more thing, and unfortunately blogging, and cooking for that matter, were the two things I had to drop for a while.  But, that ultra busy period has ended and I will try to share more here, more frequently. Although there are some big changes that are about to occur in my life that I will share with you in future posts. Today, however I’m sharing a recipe for some lip smacking vegan, gluten-free waffles! Blueberry and banana waffles to be precise.

Whew! Now you may think that is a pretentious title for this recipe. But dear readers, it’s true. These banana, walnut and chocolate chip muffins are oh so delightful and oh so delicious.  They are the the perfect treat for breakfast or an afternoon snack. Or any time you need a little pick-me-up. In fact, I could eat them all day.

Wow, I have neglected this blog over the past few days. It’s been a crazy, hectic and exhausting week and just finding five minutes here and there to write, when I’m not already too tired to think, has been a challenge. I need to get much, much better at carving out me time and making sure that I’m paying just as much attention to my partner and myself as I am to my work. Of course, it’s easier said than done.
