Blackened Tempeh Tacos 1

Have you ever had fresh homemade tempeh? If not, you are missing out on a real treat. My partner is not a fan of store-bought tempeh, but loves the tempeh we make at home. It just tastes fresher, nuttier & yummier, with none of the bitterness store-bought tempeh sometimes has.

I can’t get enough of it, which is fine because it’s incredibly healthy.

Once in a while I come up with a recipe that is really, really mind blowing. On the rare occasion it does happen, it is usually of the baked goods variety. In this case it is is these spectacular peanut butter and chocolate chip mini muffins.  If there is one recipe of mine you should try, it is this. 

You know how sometimes you try gluten-free baked goods and they are dry, heavy and dense and the only way they are kinda edible is if you toast them?

New York, NY Restaurant Review: Candle Cafe

Last month when I was stuck at the UN at all hours, there was one morning I had a bit of free time before I knew I would be working late into the night.  So I decided to go for a long walk and stop in for lunch at Candle Cafe.  It has been a long time since I have visited, mostly because I don’t ever really have a reason to be on the Upper East Side. But I enjoyed my food so much I’ve decided that visiting Candle Cafe is as good a reason as any to spend more time in that neighborhood.

Creamy Parsley Dressing & Quinoa Salad

Sometimes I want a creamy dressing, but not all the calories that go along with them.  When I was making a quinoa salad for dinner last week, I whipped up this creamy, briny & totally tasty dressing in the blender. The best thing about it? It’s incredibly light, but it tastes like it’s not.

I’ve been using a lot of parsley lately for no other reason than I have a ton of it growing in my kitchen.

Baked Mushroom Risotto

I love risotto, but I’m not a huge fan of standing over the stove, even if it is only for 20 minutes or so. So when I learned that it can also be cooked in the oven, I had to try it. I first tried this amazing baked tomato risotto by Vegangela. It was not only super easy, it tasted just as great as risotto cooked the traditional way.  So last night with a pound of crimini mushrooms in the fridge that I needed to use, I decided to try my hand at a baked mushroom risotto.  It turned out even better than I had hoped!
