We have green smoothies for breakfast every day. It’s a great and refreshing way to start the day with a dose of greens, as well as omega-3 and omega-6 from seeds, and other healthful ingredients. I like to be creative with my green smoothies, and sometimes it’s successful and other times, meh.  My partner was starting to get a bit sick of them, so he asked me to focus on things he really likes for a while: chocolate, banana and peanut butter being three of the key ingredients.

5-Minute Butternut Squash Soup

For Thanksgiving I had a beautiful butternut squash that I used for many different parts of our  meal: in my favorite kale salad, roasted with root vegetables, and in this delicious butternut squash soup.  This is the easiest butternut squash soup you’ll ever make, but you’ll need a high-speed blender like a Vitamix to do it.  Because of the high speed at which the Vitamix blends it actually has the ability to not only purée, but to heat. As a result, you can make a delicious hot soup in your blender in a matter of minutes.

Papaya and Dragon Fruit Green Smoothie

I just came back from Thailand, where the tropical fruit is amazingly good! Every day I was there I snacked on the most delicious dragon fruit, guava, pineapple, papaya, watermelon and the best ever little ladyfinger bananas. This smoothie combines two of my favorite tropical fruits: dragon fruit and papaya.

Addis Ababa, Ethiopia Restaurant Review: Enya’s Mediterranean Kitchen

Enya’s Mediterranean Kitchen is among the most highly rated restaurants in Addis Ababa, according to TripAdvisor. Given that Mediterranean food is also vegan-friendly, I made it a priority on this trip to check it out.  As luck has it, the meeting I was attending was at a nearby hotel so one evening I dragged some friends and colleagues along with me for an evening of good food and conversation.

I had been dreaming up this salad for days before I made it for Thanksgiving. What could be better than a salad that combines many of my favorite foods? Brussel sprouts, avocado, butternut squash, kale, portobello mushrooms… check, check, check, check and check!
