When I was in Thailand recently, Caryl of the awesome blog the Vegan Food Quest recommended that I seek out and try Rasayana Retreat, her favorite restaurant in Bangkok.  I took her advice and it started a torrid week-long love affair, during which I ate at Rasayana Retreat every day I could manage it!

Raw Pizza Supreme!

Oh pizza! I could eat it all day, every day, in many different ways.  Since I’ve been trying to eat fewer highly processed foods and more raw, whole foods, I’ve been passing on it.  But seriously, why should I deny myself the joys of pizza when I can make one that is just as delicious and raw? And although the crust requires a bit of forethought, once you have it on hand, dinner can be on the table in less time than it takes to pop a frozen pizza in the oven and wait for it to heat up.

It’s that time of year where, for a short time, we can enjoy strawberries and rhubarb in abundance! To celebrate, I’m sharing a lovely raw crumble that really does bring out the best of these gorgeous foods.

The crunch and tartness of raw rhubarb is not something that many people like. But in this crumble it adds some lovely texture and flavor.

Summer Kale Salad with Beyond Meat Chicken-Free Strips & Lemon Basil Vinaigrette

I’ve got a gorgeous garden growing on my patio that’s just bursting with kale and collards right now.  This year I planted red russian kale and I’m loving it.  The leaves are nice and tender, which means that you don’t need to massage it in a salad. And it has a mild, slightly bitter, slightly sweet flavor.  Plus, there’s nothing better than being able to take a few steps outside to pick a nice big, fresh bunch of it! I just clip as many leaves as I need at a time, so I can let the kale grow and produce a bountiful harvest.

Cheesy Raw Flax and Hemp Seed Crackers

Happy Friday everyone! Wow, what a week it has been. I was juggling a board meeting, staff retreat, meeting at the UN and a million other things at work and home, all while struggling to get enough sleep to do it on.  This weekend a lot of catch-up sleep is on the agenda. Along with a couple sessions at the gym, a trip to the farmer’s market, some hiking and cooking of course. Lots of that too! But first, I’m bringing you a really great raw cracker recipe.
