Roasted Red Pepper Hemp Seed Hummus

Happy World Vegan Day everyone!

Here’s another quick recipe of the hummus kind as I head back home from DC.  This hummus recipe is a modified classic: roasted red pepper hummus. This low-fat hummus is spectacularly creamy because of my secret ingredient: hemp seeds! It takes just minutes to make and is so healthy and delicious. 

Roasted Red Pepper Hemp Seed Hummus

  1. 2 15oz cans of chickpeas, one drained, one with liquid OR 3 cups of cooked chickpeas and 3/4 cup of reserved liquid from the water the chickpeas were cooked in.
  2. ¼ cup hemp seeds
  3. ¼ cup lemon juice
  4. 1 clove garlic
  5. 1 tsp cumin
  6. 2 large roasted red peppers
  7. Salt and pepper to taste.
  8. Smoked paprika (optional)
  1. Place all ingredients, except paprika, in a blender or food processor and blend or process until smooth.
  2. Transfer hummus to a bowl and sprinkle liberally with smoked paprika.
