Orange Creamsicle Ice Cream

Is there anything better than orange creamsicles? No, I didn’t think so. 

The combination of zesty orange with vanilla and cream is something that is just dreamy.  This is a quick blender ice cream that I whipped together for dessert one night and it is so good it just has to be shared!

  1. 2 valencia oranges, peeled, chopped and frozen
  2. 1/3 cup soy or coconut yoghurt
  3. 1/3 cup almond milk
  4. 2 tsps vanilla extract
  5. ¼ tsp salt
  6. Stevia, to taste
  1. Place all ingredients in a high-speed blender, and blend until smooth, but still firm like soft-serve ice cream.
  2. Serve immediately, or if you want a firmer ice cream, put it in the freezer for 15 minutes or so to harden up.
  1. If you use a Vitamix , like I do, it only takes about 30 seconds. The sound of the blender will change when everything is blended well and four mounds will appear in the corners of the container, signaling that it is ready.
  2. I’ve tried this with both soy yoghurt and coconut yoghurt and both were great. You could use plain or vanilla yoghurt.
