Roasted Red Pepper and Artichoke Hummus

Every week I make a big batch of hummus.  I love that in less than 5 minutes, I can whip together a tasty and healthy snack. I dip carrots and sugar snap peas in it to snack on between meals, while my partner loves it with Crunchmaster multigrain gluten-free crackers.

This hummus not only tastes delicious and it has no added oil! 

Roasted Red Pepper and Artichoke Hummus

  1. 2 15oz cans of chickpeas (one with liquid, one drained) or 3 cups chickpeas and 1 cup of liquid it was cooked in
  2. 1/4 cup sesame seeds
  3. 2 roasted red peppers
  4. 4 artichoke hearts (in brine)
  5. 1 tsp cumin
  6. 2 cloves garlic
  7. 1/4 cup lemon juice
  8. Salt, to taste
  9. Smoked paprika (optional)
  1. Put all ingredients in blender or food processor and blend or process until smooth.
  2. Transfer to a bowl and sprinkle with paprika.
  1. Serving size is 2 tablespoons.
