I’m on a very delayed train to DC, going nowhere somewhere outside of Baltimore. But there’s wifi, so what better time to write a blog post? 

I’ve been obsessed over the last couple of months with cara cara navel oranges. They have a lovely pink, juicy flesh and are sweet, sweet, sweet. So of course I’ve been putting them in everything, especially my green smoothies.

Double Chocolate Maca Bites!

It has been a while since I’ve posted a recipe for almond-pulp based snack bites, but this one is worth the wait.  

These bites are rich & chocolatey, with a hint of malt from the maca powder and a nice crunchiness to it from the cacao nibs. 

I use oats in this recipe and a smaller quantity of nuts than usual.

Pumpkin Spice Chia Bars

So I have been experimenting with making my own chia bars lately. I love having healthy and nutritious snacks on hand that I can take with me to work, or grab after a workout or between meals.  When I had an open can of pumpkin purée from my pumpkin cooking extravaganza, I thought why not try some pumpkin spice chia bars too? They turned out better than I even dared!

Pumpkin Oat Mini Muffins, Gluten Free

Oh yes, it really is fall now. When I left the house this morning it was 32 degrees Fahrenheit outside. Not a particularly fun way to start the day.  But what made it better was having these pumpkin oat mini-muffins to eat for breakfast!

These gluten-free mini muffins are spicy and sweet bites of pure pleasure! It took me a few tries to get the recipe just right. The trick is lots of cinnamon and coconut palm sugar, which adds a nice molasses-like flavor to them. I originally sweetened these with maple syrup, but found the coconut palm sugar just worked in this recipe much, much better.

Chocolate Banana Chia Bars

A few months ago I tried a Chia Warrior bar, which I really enjoyed.  But when I looked at the ingredients and saw the high sugar content, I knew I had to try to recreate a healthier version at home.  This was my first attempt. 

These healthy, naturally sweet treats are packed with fiber, omega-3 fatty acids, and antioxidants, as well as calcium, phosphorous, magnesium and manganese. Plus, the combination of protein and fiber will help you feel satisfied for hours afterwards.
