Buffalo Chicken Salad

Sometimes I have the hardest time coming up with what to say about my recipes. The truth is that I get inspired to make things in the most mundane ways. Today I was driving around doing errands and thinking about what to make for lunch. I wanted something spicy, and then it hit me a buffalo “chicken” salad featuring the ingredients that normally accompany wings: celery, carrots, cucumber and ranch dressing!

Wilted Kale Salad with Smoky Mesquite Vinaigrette

One night last week I got home late from work and put some red rice on to cook. Then, when I thought about how long it would be before dinner would be on the table, changed course quickly.  But that meant I had red rice cooked and ready for the next night’s dinner! 

Red rice comes from Thailand, but is readily available in health food stores.

Spicy Thai Basil Pesto & Kelp Noodle Salad

I have a Thai basil plant that is growing like mad right now. Although I make a mean thai basil tofu and although the spicy herb tastes great on sandwiches and in salads, I wasn’t able to keep up with its growth. And then it struck me: a thai basil pesto! Combined with cashew nuts, lime juice, tamari and of course, some birds eye chili peppers, it is an umami dream! Seriously – this stuff is good. It took a lot to keep me from eating it all straight out of the food processor!

Beet and Collard Salad with Orange Dijon Vinaigrette

Oh look, another salad recipe? It must be summer!  

This is a quick and easy recipe that features one of my favorite ever vegetables: beets! I meant to get to the farmers market yesterday, but it didn’t happen so vegetable pickings in my house last night were slim.  I did, however, have a gorgeous golden beet and a sweet purple beet sitting in the bottom drawer of my fridge.

Raw Rainbow Kelp Noodle Salad with Chili, Miso and Lime Dressing

This was the first thing I made when I got back from Thailand last month and you can see that I was still under the influence of Thai cuisine!

This chili, miso and lime dressing is the perfect combination of sweet, salty, sour and spicy, with an emphasis on the spicy.  If you don’t like things quite so hot, try starting out with half of a bird’s eye chili pepper and add more as you desire.
