Acorn Squash Salad with Lemon Vinaigrette

I eat salads almost every day and many times twice a day. If I go a few days without dark leafy greens, I crave them. Deeply. And of all greens to delight in, Tuscan kale, dinosaur kale or lacinato kale, whatever you call it, is by far my favorite.  It’s slightly bitter, but has a crisp sweetness to it. It has a bite to it, but is tender enough to eat without massaging or marinating. And it’s beautiful: those dark green leaves with a bluish tinge. Oh my! It’s almost enough to make me weak at the knees.

Roasted Butternut Squash Soup with Walnut Thyme Pesto

There is something deeply comforting about soup, especially when its freezing outside.  And this particular soup is like a nice bowl of liquid warmth. It has bright, beautiful, complex flavors. The walnut oil that the butternut is roasted in gives it a nutty depth. The sweetness of the butternut contrasts beautifully with the umami of the walnut thyme pesto. And while it’s already super smooth and creamy, the dollop of cashew cream just makes it a velvety delight.

Roasted Butternut Squash Pasta with Walnuts, Thyme & Goji Berries

I love butternut squash. Of all of the wonderful varieties of winter squash, it is by far my favorite.  It is sweet, but not too sweet. It is firm and lovely to bite into, but is beautifully creamy. It’s just pure delight!

When I first came up with this recipe, I wasn’t quite sure what I was going to make.  I decided the starting point would be roasting my butternut with some walnut oil and thyme and then see what I’d be inspired to do.

Tempeh, Butternut and Sage Hand Pies

I don’t know about you, but when the weather starts to get cooler I have a primal desire for comfort food. I crave anything that’s starchy or that feels rich and hearty, like bread, potatoes, pumpkin, beans, kale and tempeh (and I usually pack on a few pounds as well!)

When I woke up on Monday morning I had a vision in my head of hand pies packed with fall goodness: roasted butternut, tempeh and sage.

Mexico: Mexican Pizza

Believe it or not, Mexico is the last stop on our VeganMoFo world tour! I wasn’t intending to make Mexico our last stop. That honor was going to go to Puerto Rico. But I had a bit of a recipe fail and so decided to switch gears. And I’m glad I did, because the recipe I’m sharing today is a pretty great way to end this crazy month. 

I went to Mexico City in 2008 for the International AIDS Conference. I really didn’t get to spend a lot of time exploring the city, and even when I did manage to escape the conference center, I didn’t really take that many photos.
