I had quite the tomato harvest this year: gorgeous little yellow teardrop tomatoes, orange cherry tomatoes, little campari tomatoes and some big red juicy tomatoes. At times we had so many tomatoes I wasn’t quite sure what I’d do with them. That’s where this recipe came in. So while there are still some gorgeous fresh tomatoes ripening on the vines, I thought I’d share it.

Oh I know it has been so so long since I posted here. Sometimes there are periods where I just don’t have the head space to do one more thing, and unfortunately blogging, and cooking for that matter, were the two things I had to drop for a while.  But, that ultra busy period has ended and I will try to share more here, more frequently. Although there are some big changes that are about to occur in my life that I will share with you in future posts. Potato Salad with a Creamy Mustardy Dressing

If there was one vegetable that I’d eat three times a day every day if I could, it would be potatoes. Because I’m so addicted, I try to limit myself to the occasional treat. And one of the things that I treat myself with is potato salad.  Growing up and still, there was no potato salad that compared to my grandma’s. But I’ve been trying to expand my horizons a little, and this potato salad comes very, very close!
