Peanut Butter Bites

If you can’t already tell, I love peanut butter.  I love it in smoothies, I love it on toast, I love it in stir-fries.  If it has peanuts, I’m almost a guaranteed fan.  This very quick and easy recipe combines peanuts, dates, almond pulp and maple syrup to make a healthful snack.  Think peanut butter cookie Lara Bars, but only better because you made them yourself! 

Peanut Butter Bites (with almond pulp)

  1. ½ cup peanuts
  2. 1 cup pitted dates (About 20. If not already soft, soak in hot water for 10 mins.)
  3. Almond pulp left over from making almond milk (about ½ cup)
  4. ¼ tsp Salt
  5. 2 tsps maple syrup
  6. 2 tbsp peanuts (for coating bites) (Optional)
  1. Place peanuts and dates in food processor and process until small crumbs are formed and the mixture holds together when pressed.
  2. Add almond pulp, maple syrup and salt and pulse a few times until just combined.
  3. In a coffee grinder, crush peanuts until they resemble coarse crumbs.
  4. Form the mixture into balls in whatever size you like, or bars, or whatever other shape you might prefer!
  5. Roll the balls in the crushed peanuts to coat.
  6. Refrigerate for at least an hour before eating to let them firm up a little.
  7. Store in the fridge.
  1. I used a small cookie dough scoop to portion out these bites, which yielded 15 bites. But often I’ll use a ½ tbsp measuring spoon for smaller, less calorific snacks.
  2. These bites are at their best when kept in the fridge. You could also store them in the freezer and let them thaw for about 10 minutes before eating them.
