Sun-dried Tomato Hummus

I’ve been in Bangkok for a few days now and working long hours with limited internet access. I’ve had a few really good meals though, so will share more about them soon. But for now, here is a quick recipe I’ve been meaning to post. 

I usually make a nice big batch of hummus on a weekly basis.  This hummus recipe is infused with sundried tomatoes, both blended into the hummus and chopped in small pieces and mixed in.  The chewy sundried tomatoes not only add a special richness to the hummus, it makes the texture a little more interesting as well!

  1. 2 15oz cans of chickpeas, one drained, one with liquid OR 3 cups of cooked chickpeas and 1 cup of reserved liquid from the water the chickpeas were cooked in.
  2. ¼ cup sesame seeds
  3. ¼ cup lemon juice
  4. 1 clove garlic
  5. 1 tsp cumin
  6. 5 tbsps sundried tomatoes (packaged dry, not in oil. If not already soft, soak in warm water for 10 minutes to rehydrate).
  7. Salt and pepper to taste.
  8. Smoked paprika (optional)
  1. Add all ingredients, except 2 tbsps of sundried tomatoes, to a food processor or blender.
  2. Blend on high or process until smooth.
  3. Transfer to a bowl.
  4. Finely dice remaining 2 tbsps of sundried tomatoes.
  5. Add diced sundried tomatoes to the hummus and mix.
  6. If you like, sprinkle some additional chopped tomato and a touch of smoked paprika on top and enjoy!
