Lemony Sesame Bites

Here is a quick and easy recipe before I board my flight to Bangkok.  Yes, I’m going back again for work and this trip promises to be especially hectic! 

Whenever I make a fresh cup of almond milk, I make a new set of raw bites so that I can use up the remaining pulp. These ones are particularly special, combining lemon with black and white sesame seeds! Yum yum!

  1. ½ cup cashew pieces
  2. 20 dates (if not already soft, soak in warm water for 10 mins first)
  3. Almond pulp (leftover from making almond milk, about ½ cup)
  4. 2 tbsp shredded coconut, plus more for coating bites
  5. Zest from one large lemon (about 1 ½-2tsps)
  6. 1 tbsp lemon juice
  7. ¼ tsp lemon extract
  8. Pinch of salt
  9. 2 tbsps white sesame seeds
  10. 2 tbsps black sesame seeds
  1. Add dates and cashew pieces to food processor and process until the mixture is well combined and sticks together when pressed.
  2. Add almond pulp, shredded coconut, lemon zest and juice, lemon extract and salt and process until just combined.
  3. Add black and white sesame seeds and pulse a few times until the seeds are dispersed throughout the mixture.
  4. Place shredded coconut in a low bowl or plate.
  5. Using a cookie scoop or measuring spoon, spoon out mixture and roll into balls.
  6. Roll balls in shredded coconut so that they are evenly coated.
  7. Refrigerate at least one hour before eating to allow them to firm up.
  8. Store in the refrigerator.
