Raw Strawberries and Cream Granola

One of my go-to weekday breakfasts is granola with vegan yoghurt and fruit. And right now, as I’m finishing the last of my WholeSoy Co. plain yoghurt (sob), I thought I would share my recipe for a delicious raw strawberries and cream granola. It’s great with yoghurt and fresh strawberries, or with a little vegan milk. Either way, it’s a healthful way to start your day.

Raw buckwheat groats are actually the seed of a fruit, not a true grain. And because of it, they are naturally gluten free. They are also have a higher dosage of iron and b vitamins than other grains, like oats. When soaked and dehydrated they become a nice, crunchy, nutty treat.

Ingredients
  1. 1 cup raw buckwheat groats
  2. 1/4 cup shredded coconut
  3. 1/4 cup hemp seeds
  4. 2 tbsps chopped, dried strawberries
  5. 3/4 cup freeze-dried strawberries, divided
  6. 1 tsp vanilla
  7. 1/8 tsp salt
  8. 1/4 cup maple syrup
  9. Stevia to taste (optional)
Instructions
  1. Soak buckwheat groats for at least one hour. The groats should double in size.
  2. Drain and rinse well.
  3. Using a mortar and pestle, grind 1/4 cup of the freeze-dried strawberries into a powder.
  4. Place in a large bowl, along with coconut, hemp seeds, dried strawberries, strawberry powder, vanilla, salt, maple syrup and stevia and stir to combine.
  5. Spread out onto a teflex-lined dehydrator sheet (you may need more than one).
  6. Dehydrate at 115 degrees for 8 hours or overnight.
  7. Break apart and dehydrate for another 4-6 hours, until dry.
  8. Add remaining freeze-dried strawberries.
  9. Store in an air-tight container.

I have to confess that I have a bit of an addiction to freeze-dried fruit. It’s just so intensely flavorful! It really infuses a lovely strawberry flavor in this granola and so it really is worth seeking out.
