Okay, this is the first of three, yes three, Valentines Day inspired desserts that I am going to be posting this weekend. Berries, cream and chocolate are some of the most iconic symbols of Valentines Day.  And if that’s what your pining for, this dessert won’t disappoint: a creamy strawberry mousse nestled in a chocolatey hazelnut crust with an optional drizzle of chocolate on top! This will definitely result in some swooning.

To flavor the strawberry mousse I use freeze-dried strawberries. You can buy them at Trader Joes and many health food stores. The great thing about freeze drying anything, but particularly fresh fruit, is that the process concentrates their flavors. And the result is amazing. Each piece of freeze-dried strawberry is like a little flavor bomb. And this allows us to add tons of beautiful, bright strawberry taste without a lot of extra moisture. To amp up the strawberry-ness a bit more though, I added diced chopped strawberries to the mousse, just before I poured it over the crust in the springform cake-pan to set.

Crust
  1. 1/4 cup raw hazelnuts
  2. 1/4 cup oats
  3. 1/2 cup dates
  4. 1/2 tsp vanilla extract
  5. tiny pinch of salt
  6. 1 1/2 tbps cacao powder
  7. 1/2 tbsp coconut oil, aroma free
Strawberry Mousse
  1. 1/2 cup cashews, soaked 4-6 hours
  2. 1/2 cup filtered water
  3. 3/4 cup freeze-dried strawberries
  4. 2 1/2 tsps maple syrup
  5. 1 packet stevia (optional, to increase the sweetness)
  6. 2 1/2 tbps coconut oil, aroma free
  7. 1 tbsp Irish moss powder
  8. 1/2 tsp vanilla extract
  9. Tiny pinch of salt
  10. 2 tbsps or more of finely diced fresh strawberry pieces
Crust
  1. Place all ingredients, except coconut oil, in a food processor and process until the hazelnuts, oats and dates are broken down.
  2. Add coconut oil and process again until combined.
  3. The crust should be slightly moist and stick to itself and the side of the food processor when pressed against it.
  4. Press into the bottom of a 4-inch springform pan.
Strawberry Mousse
  1. Place soaked and drained cashews, water, freeze-dried strawberries, maple syrup, stevia, coconut oil, irish moss powder, vanilla extract, and salt into a blender and blend until smooth.
  2. Continue blending for another few minutes or so to slightly heat up the mixture and activate the irish moss.
  3. Add strawberry pieces and mix with a spatula to combine.
  4. Pour on top of prepared crust.
  5. Refrigerate for at least 2 hours, or overnight, until firm.
  6. When top is firm to the touch, carefully release from spring-form pan and serve.
Notes
  1. You can top it with a little melted chocolate if you like. It just adds an extra something, something.
  2. You might have a little extra crust left over, that's okay. Make them into energy balls!
  3. And if there's a tiny bit of extra mousse left over, well... you know what to do!
