For generations we have sprouted chia seeds on silly shaped terra-cotta pots. Maybe we ate them, maybe we didn’t. But that was about as far as our relationship with chia seeds went.

Now, however they are one of those super foods we can’t get enough of. We eat them in puddings, we put them in our smoothies and of course, we put them in energy bars. The recipe I’m sharing today is like an ode to those delightful little seeds. And to make it even better, it has two other super food ingredients: goji berries and raw cacao.

Chocolate & Goji Berry Chia Bars!

These chia bars are the easiest thing in the world to make. They contain no refined sugars and they are packed with flavor. They feel like a wicked treat, even though they are really very, very good for you. And they make a perfect in-between-meals snack.

  1. 1 cup chia seeds
  2. 1 cup pitted dates
  3. 1/2 cup water
  4. 1/3 cup goji berries
  5. 2 tbsps raw cacao powder
  6. 1 tsp vanilla extract
  7. 1/8 tsp of salt
  1. If your dates are soft, place them in your food processor along with 1/2 cup of filtered water and process until they form a smooth paste. (If they are a bit tough, soak them in warm water for an hour or so first to soften them up. Drain them well and use 1/2 cup of the soaking water in place of the filtered water to process them with.)
  2. If your goji berries are hard, soak them in warm water to soften them.
  3. In a small bowl, combine the chia seeds, with cacao powder, date paste, salt, vanilla and goji berries.
  4. Let sit for 5 minutes to allow the chia seeds to soak up excess moisture.
  5. Using a large cookie scoop, scoop out balls of the dough.
  6. Shape them with your hands into either rounds, squares, or any other shape you desire.
  7. Refrigerate for at least 30 minutes, to let them firm up.
