What’s for dinner? Pad Thai!

Putting into practice the skills that I learned at May Kaidee’s cooking class in Bangkok!  

Just about every vegan pantry should have the ingredients necessary to cook this from scratch: carrots, onion, tomato, tofu, garlic, lime juice, tamari, chili peppers, sugar, rice noodles, coconut milk, peanuts and whatever veggies you like. No oil-, sugar-, or preservative-laden store-bought sauces necessary! 

So incredibly easy. So incredibly delicious.
