Pineapple and Lychee Green Smoothie

As I’m writing this I’m sitting in a vegetarian restaurant in Bangkok called Ethos and sipping on green tea and a delicious pineapple and sweet basil smoothie.  The fruit “shakes” (as they call them here) are phenomenal, they usually contain just fruit and ice, and you can get them just about anywhere.  I’m sure they are so good because the fruit in Thailand is so amazing: juicy mangos, fresh dragonfruit, sweet watermelon, heavenly passionfruit…. So I guess it’s fitting that I’m posting this tropical fruit smoothie recipe while I’m here.

A few weeks ago my partner and I made the trip to an Asian buy clonazepam discount grocery store in Westchester to stock up on canned jackfruit, among other things.  They had big bags of lychees on offer and I just couldn’t resist.  When they started to get a bit too ripe and I knew we wouldn’t be able to eat them all quickly, I decided to peel and pit them and then put them in the freezer for use in smoothies.  I am so glad I did because they added something special to every smoothie I put them in.  This pineapple lychee combination was my favorite. 

Pineapple and Lychee Smoothie

  1. 3 Cups Baby Spinach
  2. 1 Cup Lychees, frozen
  3. 1 Cup Pineapple, frozen
  4. 1 Tbsp Hemp Seeds
  5. 1 Cup Almond Milk
  6. 1 Cup Ice
  7. Additional water, if needed, to achieve desired texture
  8. Stevia, or other sweetener, to taste
  1. Place all ingredients in a blender and blend until smooth.
