Thai Beef-free Lettuce Wraps

Oh dear blog, how have I neglected you over the past several weeks as work has sucked just about everything out of me. But now, with what we called the “madness” behind me, I can get back to the business of cooking and blogging.

Today, I’m sharing with you a sweet and simple recipe featuring Beyond Meat‘s new beef-free crumbles. Believe me, these crumbles are definitely worth seeking out! I have only tried the “beefy” flavor so far, but found them incredibly tasty and great in a variety of dishes.  Not only are they packed with protein and low in fat, they are also gluten-free, which results in two big thumbs up from me.  And to make it even easier for you, here’s a buy one get one half off coupon (valid until May 1, 2014)! 

This recipe combines the beef-free crumbles with delicious thai spices, creamy avocado and romaine lettuce leaves to create a healthy and light, but satisfying dinner.

Ingredients
  1. 1/2 tbsp grape seed oil
  2. 1 small onion, diced
  3. 1 medium carrot, cut into 2-inch matchsticks
  4. 1 cup Beyond Meat beef-free crumbles
  5. 1 cup broccoli florets, chopped into small pieces
  6. 1 tsp green curry paste
  7. 1 1/2 tbsps tamari
  8. 1 1/2 tbsps lime juice
  9. 1 tsp coconut palm sugar
  10. 1 tsp chopped lemon grass
  11. 1 tsp finely chopped kaffir lime leaves
  12. 3 tbsps cilantro, chopped
  13. 6 romaine leaves
  14. 1/2 avocado
Instructions
  1. Heat grape seed oil in a wok, or pan.
  2. When hot, add carrots and onions and sauté until soft.
  3. Add beef-free crumbles & cook until they just begin to brown.
  4. Add broccoli & cook for another minute.
  5. Add green curry paste, tamari, lime juice, sugar, lemongrass, kaffir lime leaves and stir to coat veggies and beef-free crumbles and cook for another couple of minutes to allow the flavors to combine.
  6. Turn off heat and add most of the cilantro (leaving some for garnishing) and give it another stir.
  7. Arrange the romaine leaves and evenly spoon the mixture onto them.
  8. Top with some fresh cilantro and avocado.
  9. Eat with relish!
