Smoked Tofu Salad

This is a very busy time for me at work, so when I get home at night I’m not interested in slaving over the stove. All I really want to do is get a really delicious and nutritious dinner on the table as quickly as possible. This salad fits the bill perfectly.  If you use a store-bought smoked tofu you can get it on the table in 10 minutes. This really is great vegan fast food.  

This salad was inspired by one I ate at Eatonville restaurant in DC.  It’s not quite as amazing (I can’t compete with real applewood smoked tofu!), but it’s still pretty good! 

I served it up with some baked sweet potato fries. Delicious!

If you want to marinate your own smoked tofu, combine a bit of apple cider vinegar, tamari, and a couple of drops of liquid smoke in a bowl and soak your very, very well-pressed tofu in it for at least an hour. 

Smoked Tofu Salad

Dressing
  1. 1 tbsp mustard
  2. 1 1/2 tbsps apple cider vinegar
  3. 1 tsp coconut palm sugar
Salad
  1. 4 ounces of smoked tofu (I used Tofu Boy baked smoked tofu, so good!)
  2. 3 cups of pea shoots, or other salad greens
  3. 2 small tomatoes, chopped
  4. 1/2 red onion, thinly shaved
  5. 1/2 avocado, chopped
  6. 2 tbsps capers (in brine)
  7. Salt and pepper (optional, to taste)
Dressing
  1. In a small container, combine the mustard, apple cider vinegar and coconut palm sugar and mix with a fork until the sugar dissolves.
Salad
  1. Press excess liquid from the tofu and cut into 1-inch chunks.
  2. Dry sauté the tofu in a frying pan over medium heat until nicely browned on each side.
  3. In a large bowl combine pea shoots, onion, tomatoes, capers, avocado and tofu.
  4. Pour over dressing and mix with your hands or a spatula to ensure everything is well-coated.
  5. Dish onto two plates and sprinkle with a touch of salt and freshly cracked black pepper.
