The perfect black beans

In the wintertime I crave food that is warm and sustaining.  These black beans fit the bill perfectly.  The beans are beautifully seasoned, with a nice tang from the lime juice and a subtle kick from the ancho chili powder. When served over brown rice they make a complete and filling meal.

The best part about this recipe though is that it’s so quick and easy to pull together.  With just a few minutes of prep, you can have this delicious comfort food on your table in no time. And if you have a schedule that’s anything like mine, that’s something you’ll no doubt appreciate.

  1. 1 can of black beans with liquid, or 1½ cups of cooked black beans and ¾ cup of the liquid they were cooked in
  2. 1 small onion
  3. 1/3 cup chopped red or yellow bell peppers
  4. 2 cloves garlic
  5. ¾ tsp ancho chili powder
  6. 1½ tsps lime juice
  7. ½ cup vegetable broth
  8. 1 bay leaf
  9. ½ tsp of dried cilantro
  10. Water for sautéing
  11. Salt & pepper to taste
  12. Fresh cilantro for garnish (optional)
  1. Place a heavy-bottomed saucepan on medium high heat.
  2. When hot add about a tbsp. of water and the onion and sauté for about 5 minutes, until onions are soft.
  3. Add garlic and sauté for another 30 seconds or so more, until the garlic has released a beautiful aroma.
  4. Add peppers and sauté for another 2 minutes.
  5. Add ancho chili powder, lime juice, beans, vegetable broth, bay leaf, cilantro and salt and pepper.
  6. Bring to a boil, then let simmer for about 20 minutes to allow the flavors to combine.
  1. This is delicious served over rice or wilted greens.
