Spicy Lentil Soup

I have been on a bit of a soup kick lately.  It’s the ultimate comfort food. So warm and sustaining, especially when it’s freezing outside. And when it’s paired with a fresh loaf of crusty gluten-free bread, so yum!

I love lentil soup, but so much of what is available is bland and boring.  This soup is anything but. It’s lentil soup at a whole other level.  It is full of rich herbs and seasonings and packs some heat, thanks to the addition of a jalapeño.  If you like a bit of spice, this soup is for you! But even if you don’t, you could leave out the jalapeño and it would still be amazing. 

Spicy Lentil Soup

  1. 1½ cups lentils (Green or French/puy lentils work well)
  2. 1 medium carrot, sliced and halved
  3. 1 small onion, diced
  4. 1 small jalapeño, diced
  5. 2 cloves of garlic, chopped
  6. ¼ tsp mustard seeds
  7. ¼ tsp celery seeds
  8. ¾ tsp oregano
  9. ½ tsp rosemary
  10. ¼ cup red wine
  11. 1 can roasted tomatoes (with green chilies if you want some extra heat)
  12. 2 cups of vegetable broth
  13. Salt and pepper to taste
  14. Water for sautéing
  15. Basil for garnishing
  1. Heat a large, heavy-bottomed on medium-high heat.
  2. When hot add a tbsp of water and your carrot, onion, jalapeño and garlic.
  3. Cook for about 5-6 minutes, adding more water as needed (but go easy on it). You want the carrots and onions to be soft and nice browned bits at the bottom of the pot for flavor.
  4. Add mustard seeds, celery seeds, oregano, rosemary, black pepper and a touch of salt to the pot and let cook for 30-60 seconds more, until spices become aromatic.
  5. Add lentils and cook for another minute or two.
  6. Add ¼ cup of red wine to deglaze the pot. Give the bottom of the pot a few scrapings with a spatula to get up the browned bits and incorporate the flavors into your soup.
  7. Add roasted tomatoes and vegetable broth.
  8. Bring to a boil, then let simmer for about 20-25 minutes to allow the flavors to blend together.
  9. Taste and add additional salt and pepper as needed.
  10. Garnish with some freshly chopped basil.
