Chocolate-Covered Goji Berry Green Smoothie

I’m back at work today for the first day in 2014. I wish I could say I was ready for what’s in store for the year ahead, but the next few months are going to be pretty brutal.  Deep breath. 

Today I’m sharing a smoothie recipe that took me a bit by surprise.  I needed something sweet (but healthful of course) and decided that a chocolate green smoothie was in order. But I wanted something a bit more than just chocolate.  Looking in my cupboard I came across a pack of goji berries and thought, why not?

Wow! They added a beautiful depth and complexity to what is otherwise a pretty run-of-the-mill green smoothie. 

This is one that is definitely worth trying!

Chocolate-Covered Goji Berry Green Smoothie

  1. 3 cups of spinach or kale
  2. 2 bananas, chopped and frozen
  3. 1 cup of almond milk or other non-dairy milk
  4. 3 tbsps raw cacao powder
  5. 1 tbsp dried goji berries
  6. 1 tbsp chia seeds
  7. 1 tsp vanilla extract
  8. Pinch of salt
  9. Stevia, to taste
  1. Place all ingredients in a blender and blend on high until smooth.
  1. If you’re not using a high-speed blender and your goji berries are a little tough, you may want to soften them up a bit first by soaking them in hot water for 10 minutes.
