Perfect vegan and gluten-free French Toast

It has been a long time since I’ve had French toast. But when I got my hands on some nice millet bread recently and remembered the Vegg powder sitting in my cupboard, I thought I’d give it a try.

It was fantastic!

The Vegg pulls it all together perfectly and adds some depth to the recipe, but it may work without it (I haven’t tried).  If you don’t have it on hand, you can order it on Amazon. Believe me, it is worth it!

Vegan, Gluten-Free French Toast

Ingredients
  1. 1 1/2 tsp Vegg powder
  2. 1 cup almond milk
  3. 2 tbsps tapioca flour
  4. 1 1/2 tbsps coconut palm sugar
  5. 1/2 tsp cinnamon
  6. Pinch of salt
  7. 6 slices of gluten-free bread
Instructions
  1. Place all ingredients in a blender and blend until smooth, about 30 seconds.
  2. Pour mixture into a wide bowl.
  3. Heat a pan on high-medium heat until it is evenly warm.
  4. Dip bread in mixture and ensure it is well-covered on both sides.
  5. Add some vegan butter or oil to the pan and turn heat down to low, or low-medium.
  6. Add bread to pan and let cook for about 4-5 minutes, until golden brown and batter is starting to lift from pan.
  7. Carefully flip and cook on the other side for another 3-4 minutes.
  8. Repeat until all mixture has been used.
Notes
  1. You do really need to blend the mixture. I use a hand blender, and it takes only seconds.
  2. And be patient cooking these. You'll get nice crisp French toast with this recipe, but you can't rush it. If you flip it too soon, it will stick. I use a cast-iron pan for all my cooking and swear by it.
