Strawberry Frozen Yoghurt

Strawberry frozen yogurt

It’s snowing outside and roads promised to be a mess for the commute this evening, so I worked from home today.  It was the most productive day I have had in a while. Needless to say, it actually felt like I was busier today than on the days that I commute into the office. At least then I have some down time to write blog posts, catch up on other email and generally decompress before getting home to exercise, cook dinner and get things ready for the next day.

Roasted Tomato Soup with Pesto

Roasted Tomato Soup with Pesto

Tomato soup was a household favorite when I was a kid. Usually of the canned variety, sometimes with a bit of hot milk added in. And always with some bread on the side.  This recipe takes a childhood favorite and transforms it into something that is very, very grown-up.

The flavors in this soup are just amazing. Roasted tomatoes add some richness and depth.

Delicious Gluten-Free Waffles

So I have struggled for so long to make the perfect waffles. Nine times out of 10 my waffles would stick to the waffle iron and nothing I seemed to do seemed to work (non-stick spray, check; more oil in batter, check; more heat, less heat, check check check!)

Eventually I decided I needed a waffle iron that I could actually control and so opted to get a good old-fashioned cast-iron waffle iron.  If you haven’t already realized, I love cast-iron cookware.

The perfect black beans

The perfect black beans

In the wintertime I crave food that is warm and sustaining.  These black beans fit the bill perfectly.  The beans are beautifully seasoned, with a nice tang from the lime juice and a subtle kick from the ancho chili powder. When served over brown rice they make a complete and filling meal.

The best part about this recipe though is that it’s so quick and easy to pull together.
