Oh yes, it really is fall now. When I left the house this morning it was 32 degrees Fahrenheit outside. Not a particularly fun way to start the day.  But what made it better was having these pumpkin oat mini-muffins to eat for breakfast!

These gluten-free mini muffins are spicy and sweet bites of pure pleasure! It took me a few tries to get the recipe just right. The trick is lots of cinnamon and coconut palm sugar, which adds a nice molasses-like flavor to them. I originally sweetened these with maple syrup, but found the coconut palm sugar just worked in this recipe much, much better.

Portobello Mushroom Stroganoff

One evening last week I started out making my mushroom and garlicky greens tacos. But then I switched course midstream when I tasted the delicious mushrooms I had sautéing and was flooded with memories of one of my favorite childhood meals. So I decided to make a mushroom stroganoff instead.  Good thing largely the same ingredients are called for in both!

Creamy Hemp Seed Hummus

One morning last week as I was getting ready for work, I realized that we were out of hummus. Such a disaster! Both my partner and I rely on having hummus on hand to dip veggies and gluten-free crackers into throughout the day.  I needed to pull something together quickly, so decided to make a basic hummus. Only this time, instead of using sesame seeds, I decided to throw in hemp seeds.  The result was an incredibly creamy and oh so yummy!

Warwick, NY Restaurant Review: Conscious Fork

A couple of weeks ago I was using the Happy Cow app to browse for restaurants that were not too far from where I live in the mid-Hudson Valley, NY and came across the Conscious Fork in Warwick.  How did I not hear of this vegan café and store previously? When I checked out their website, I was excited to see what they had to offer: simple, healthy, vegan comfort food with lots of fresh, organic vegetables.  My partner and I headed out there last Monday for lunch.

Vegan Gluten-Free Fajitas

Last night as I was taking the train home I started thinking about what I should cook for dinner and running through the things I had in the fridge that I needed to use… avocado, corn tortillas, peppers and of course what comes to mind? Fajitas! I had just replenished my stock of Butler Soy Curls and just knew they would be perfect for this recipe.
